Mini Baked Alaska

  1. SPREAD 8 graham wafers evenly with raspberry jam.
  2. Top each wafer with an ice cream scoop and freeze.
  3. WHIP egg whites until frothy, add cream of tartar and continue beating gradually adding sugar until thick and glossy.
  4. REMOVE a wafer from freezer and working quickly, completely cover ice-cream and wafer with the meringue (making sure to spread meringue to edges of wafer).
  5. Freeze until ready to bake.
  6. Repeat with remaining wafers until you have 8 mini alaskas.
  7. Place under broiler until the meringue is golden brown, about 3 minutes.
  8. Serve at once or refreeze until ready to serve.
