Mini Baked Alaska
- 8 HoneyMaid Graham Wafers
- 1/4 cup Kraft Pure Raspberry Jam (optional)
- 8 frozen small scoops of ice cream, use your favorite flavour
- 4 egg whites
- dash cream of tartar
- 1/2 cup granulated sugar
- SPREAD 8 graham wafers evenly with raspberry jam.
- Top each wafer with an ice cream scoop and freeze.
- WHIP egg whites until frothy, add cream of tartar and continue beating gradually adding sugar until thick and glossy.
- REMOVE a wafer from freezer and working quickly, completely cover ice-cream and wafer with the meringue (making sure to spread meringue to edges of wafer).
- Freeze until ready to bake.
- Repeat with remaining wafers until you have 8 mini alaskas.
- Place under broiler until the meringue is golden brown, about 3 minutes.
- Serve at once or refreeze until ready to serve.
