huevos ahogados
- 1 clove garlic
- 1 slice onion
- 3 jalepenos
- 2 roma tomatos
- 1 1/2 cup water or chicken stalk
- 8 eggs
- 4 epazote leaves
- boil jalepenos and tomato until tender.
- place in blender with garlic, onion, and water or chicken stalk and blend until smooth.
- in a large fry pan add a little oil to coat the pan and heat it.
- when fry pan is hot add the blended mix, stir in salt to taste and epazote, continue to stir occasionally until it boils.
- when mixture is boiling lower the temp to medium- medium high.
- Crack and add the eggs 1 at a time in the mixture and let simmer until the eggs are cooked to your liking.
