Mushroom & Cheese Pie
- 5 cup corn chex, crushed (or chex of your choice)
- 1 1/2 tsp oregano
- 6 tbsp butter, melted
- 1/2 lb fresh mushrooms, sliced (could also use 8oz. canned mushrooms, drained)
- 3 eggs, beaten
- 1 1/2 cup Half & half
- 1/2 tsp salt
- 1 dash pepper
- 1/4 tsp onion powder
- 1 1/2 cup shredded cheddar cheese
- Preheat oven to 325F.
- Grease 9" pie plate.
- Combine chex, oregano, & melted butter until well mixed.
- Press onto bottom & sides of pie plate.
- Bake for 8 minutes.
- Cool for at least 5 minutes.
- Spread mushrooms in bottom of shell.
- Combine eggs, half & half, salt, pepper, & onion powder.
- Pour over mushrooms.
- Sprinkle cheese evenly over top.
- Bake for 35 minutes.
- Allow to cool for 10 minutes before serving.
