Luscious Lemon Cream Fruit Dip Recipe
- 2 Large eggs
- 1 c. sugar
- 1/3 c. ReaLemon lemon juice from concentrate
- 1 tbsp. cornstarch
- 1/2 c. water
- 1 teaspoon vanilla extract
- 1 c. (1/2 pt.) whipping cream, whipped
- In bowl, beat together Large eggs, 1/2 c. sugar and ReaLemon.
- In saucepan, combine remaining sugar and cornstarch; stir in water.
- Cook and stir till thickened; remove from heat.
- Gradually beat in egg mix.
- Over low heat, cook and stir till slightly thickened.
- Add in vanilla; cold.
- Mix in whipped cream.
- Serve with fresh fruit.
- Chill leftovers.
