Chocolate-Peppermint Cookies

  1. Preheat oven to 350F.
  2. Combine butter and sugar in a large bowl, Using an electric mixer set on high speed, beat until light.
  3. Add egg, vanilla, peppermint and salt and beat unti llight and fluffy.
  4. Reduce speed to low, mix in cocoa.
  5. Then add flour and mix until well blended.
  6. Pack dough into a cookie press.
  7. Fit with desired design plate.
  8. Press dough out onto ungreased baking sheets, spacing cookies 1-inch apart.
  9. Bake until firm to touch, about 10 minutes.
  10. Transfer cookies to wire racks to cool, Store in airtight containers at room temperature for up to 5 days.
