Light and Fluffy Rice Flour Pancakes
- 200 grams Rice flour
- 60 grams Sugar
- 2 Eggs
- 2 tsp Baking powder
- 2 tbsp Vegetable oil
- 1 Vanilla essence
- 150 ml Milk
- Break the eggs into a bowl, then lightly mix with a whisk.
- Stir in the sugar.
- Add the milk, vegetable oil, and vanilla essence, and mix until evenly combined.
- Sift in the rice flour and baking powder, then use a rubber spatula to mix the batter to an even consistency.
- Bake your pancakes on a frying pan or griddle.
- It might be easier if you use a griddle since you'll be able to make more than one at a time.
