Light and Fluffy Rice Flour Pancakes

  1. Break the eggs into a bowl, then lightly mix with a whisk.

  4. Sift in the rice flour and baking powder, then use a rubber spatula to mix the batter to an even consistency.

  6. It might be easier if you use a griddle since you'll be able to make more than one at a time.
