Spicy Jalapeno Sliders
- 1 lb ground beef
- 2 jalapenos, seeded and diced fine, plus additional jalapenos for serving
- 2 shallots, chopped fine
- 12 cup panko breadcrumbs
- 14 cup heavy cream
- 14 cup grated spicy monterey jack cheese
- 1 pinch garlic powder
- 1 tablespoon kosher salt, plus pinch
- 12 teaspoon cracked black pepper, plus pinch
- 1 cup mayonnaise
- 2 chipotle chiles in adobo
- 1 tablespoon adobo sauce
- 12 lime, juice
- salt & freshly ground black pepper
- 12 mini dinner rolls
- Preheat oven to 350 degrees F.
- In a large bowl, add ground beef, jalapenos, shallots, panko, heavy cream, cheese, garlic powder, 1 tablespoon salt, and 1/2 teaspoon black pepper.
- Mix together well.
- Form into small patties and place in the oven for 35 to 45 minutes.
- Chipotle Mayonnaise: Add all the chipotle mayo ingredients to a food processor and puree.
- Season, to taste, with salt and pepper.
- Spread mayo on both sides of buns.
- Place burgers in middle and pick it with a jalapeno.
