SOS Grilled Cheese
- 1/2 cup (1 stick) unsalted butter, cold, plus 1/2 cup (1 stick), at room temperature
- 1/4 cup all-purpose flour
- 1/2 cup heavy cream
- 10 ounces dried beef or salami, chopped into 1-inch cubes
- 2 tablespoons coarse black pepper
- 1 tablespoon ground coriander
- 2 tablespoons canola oil
- 3 large Yukon gold potatoes, sliced
- 16 slices Texas-style sliced bread
- 16 slices Muenster cheese
- Add the flour and 4 tablespoons of the cold butter to a pot over medium heat; stir and combine.
- Slowly whisk in the cream and bring to a simmer.
- Add the chopped meat, pepper and coriander and continue to whisk and simmer until it thickens.
- Turn off the heat.
- Meanwhile, combine the oil and the remaining 4 tablespoons cold butter in a large pan over medium heat; add the potatoes.
- Fry, flipping occasionally, until golden brown in color.
- Drain the excess oil and set aside.
- Heat a griddle over medium-high heat.
- Butter each side of the bread slices with the softened butter and place on the griddle until golden brown.
- Flip and layer on the Muenster cheese, meat gravy and potatoes.
- Sandwich together and fry until golden brown and the cheese is melted.
- Cut in half and serve immediately.
