Artichoke Fritters Recipe

  1. Place artichoke hearts in a large bowl and stir in egg yolks and baking pwdr.
  2. Add in green onion.
  3. Mix in lemon peel.
  4. Fold in flour, salt and pepper.
  5. In a separate bowl, beat egg whites and cornstarch together till peaks form.
  6. Fold egg whites into artichoke mix.
  7. Heat oil to 360 degrees.
  8. With a Tbsp., drop half dollar sized dollops of fritter batter into oil.
  9. Fry till golden, maintaining oil at 360 degrees.
  10. Remove fritters with a slotted spoon and drain on paper towels.
