California Style Fried Egg Sandwich Recipe

  1. Combine the avocado, onion, salt, and pepper in a small bowl.
  2. Mash with a fork until well mixed, then set aside.
  3. Melt 1 teaspoon of butter in a 10-inch skillet over medium-high heat until sizzling.
  4. Break 2 eggs into a pan, breaking the yolks with a spatula.
  5. Cook until its set on the bottom, 2-3 minutes.
  6. Turn the eggs over and continue cooking until the eggs are cooked through, about 2 minutes.
  7. Remove the eggs from the pan; cover to keep warm.
  8. Repeat with 1 teaspoon butter and the remaining 2 eggs.
  9. To assemble each sandwich, spread 1 tablespoon of the avocado mixture onto 1 side of each bread slice.
  10. Top 1 slice of bread, spread-side up, with 1 fried egg, 2 slices of tomato, and 1 slice of cheese.
  11. Place 1 slice of bread, spread-side down, over the cheese.
  12. Butter the outside slices of bread with about 1 teaspoon of butter each.
  13. Place 2 sandwiches in the same skillet and cook over medium heat, turning once, until golden brown on both sides, 2-3 minutes.
  14. Repeat with the remaining 2 sandwiches.
