Charred Beef and Roasted Veggie Orzo Pasta Salad

  1. Whisk together the first seven ingredients in a bowl.
  2. Season with generous pinch of each salt and pepper.
  3. On large rimmed parchment paper-lined baking sheet, toss the veggies (not corn) with half the broth mixture.
  4. Set remaining broth mixture aside.
  5. Season beef with remaining salt and pepper; place on top of vegetables.
  6. Place under broiler about 3 inches (8 cm) from heat; broil until lightly charred, about 7 minutes.
  7. Remove from oven; toss vegetables and turn beef over.
  8. Return to oven and broil for 7 minutes.
  9. Remove steak and let rest.
  10. Stir corn into vegetables; broil until vegetables are charred and softened, about 5 minutes.
  11. Meanwhile, cook orzo according to package directions; drain and toss with remaining broth mixture, sun-dried tomatoes and Parmesan cheese.
  12. Mix in charred mixed veggies.
  13. Add Maggi and/or soy sauce to taste.
  14. Thinly slice beef across the grain and arrange over veggies.
