Zesty Oven-Fried Potatoes
- Cooking spray
- 1 1/2 pounds medium red potatoes (4 to 5), each potato cut lengthwise into 6 wedges
- 1 tablespoon olive oil
- 1/2 to 3/4 teaspoon Creole Seasoning (page 278) or salt-free spicy seasoning blend
- 1/2 teaspoon pepper
- 2 tablespoons malt vinegar
- Preheat the oven to 400F.
- Lightly spray a large baking sheet with cooking spray.
- Arrange the potato wedges in a single layer on the baking sheet.
- In a small bowl, stir together the oil, Creole Seasoning, and pepper.
- Drizzle over the potatoes, stirring to coat.
- Bake for 30 minutes, or until the potatoes are golden and tender.
- Just before serving, sprinkle with the vinegar.
