Roast Turkey

  1. Thaw turkey.
  2. 24 hours in advance to cooking clean out &brine turkey.
  3. Fill large bucket or pan with enough water to cover turkey.
  4. Mix in 2 cups of salt and add turkey.
  5. Soak overnight (approx.
  6. 24 hrs).
  7. Rinse turkey throughly, inside and out.
  8. Preheat oven to 400.
  9. Place turkey in roasting pan with 3 cups of water.
  10. Mix in small cup; all seasonings, smash up rosemary as well as possible and sprinkle mixed seasons all over the turkey.
  11. Stuff turkey if you wish at this point --
  12. Cover and place in oven until throughly cooked (approx.
  13. 4 hours).
  14. Remove cover for last hour to brown and crisp.
  15. Baste turkey with pan juices every 30 - 45 minutes.
