Black Eyed Peas Cooked In Beer Recipe
- 1 c. Dry black eyed peas
- 2 1/2 c. Water
- 3 c. Minced turnips
- 3 c. Minced mushrooms
- 1 lrg Onion, minced
- 1 Tbsp. Apple juice concentrate
- 1/2 c. Dark beer or possibly stout
- 1/2 c. Reserved bean stock
- 4 Tbsp. Wholewheat flour combined with just sufficient water to make a thin paste
- 2 Tbsp. Minced parsley
- 2 Tbsp. Tomato puree (optional)
- 2 tsp Soy sauce
- 1/2 tsp Cinnamon
- 1/4 tsp Grnd cloves Salt/pepper to taste (optional)
- Cook peas in water till tender, about an hour.
- Drain and reserve 1/2 c. of the stock.
- Preheat oven to 400 F/200 C. "Saute/fry" the veggies in the apple juice for a few min.
- Stir in the flour/water mix and cook and stir for a minute.
- Slowly add in the beer and cook and stir for a minute.
- Slowly add in the reserved bean stock and cook and stir for a minute.
- Add in the remaining ingredients and gently boil for about 5 more min.
- Pour into a casserole.
- Bake, covered, for 1 hour.
