Black Eyed Peas Cooked In Beer Recipe

  1. Cook peas in water till tender, about an hour.
  2. Drain and reserve 1/2 c. of the stock.
  3. Preheat oven to 400 F/200 C. "Saute/fry" the veggies in the apple juice for a few min.
  4. Stir in the flour/water mix and cook and stir for a minute.
  5. Slowly add in the beer and cook and stir for a minute.
  6. Slowly add in the reserved bean stock and cook and stir for a minute.
  7. Add in the remaining ingredients and gently boil for about 5 more min.
  8. Pour into a casserole.
  9. Bake, covered, for 1 hour.
