Pumpkin Egg Salad
- 2 hard-boiled eggs, chopped up
- 1 cup pumpkin flesh, steamed and diced
- 1 cup potato, cooked and diced
- 12 cup cucumber, diced (optional)
- 12 cup carrot, diced cooked (optional)
- 12 cup raisins (optional)
- 4 tablespoons mayonnaise (or to your liking)
- 2 tablespoons thousand island dressing
- 1 teaspoon Dijon mustard (optional)
- Mix and serve.
