Apple Dapple Cake
- 3 cup Flour
- 1 tsp Bicarbonate of soda
- 1 1/2 tsp Baking powder
- 1 3/4 cup White sugar
- 1 1/4 cup Vegetable oil
- 3 Eggs
- 2 tsp Vanilla extract
- 3 Apples ( I like to use Granny Smith ) peeled and chopped
- 1 1/2 cup Pecan nuts. Roughly chopped
- 2/3 cup Sour cream
- 3/4 cup Brown sugar
- 3 tsp Butter
- 200 ml Thick cream
- 1 1/2 tsp Cinnamon
- FOR THE CAKE, Heat the oven to 175F Celsius.
- Sift flour, baking powder and bicarbonate of soda together
- Beat the sugar and oil together in a large bowl.
- Add eggs and vanilla.
- Mix well
- Mix in the flour, baking powder and baking soda.
- Alternate with cream.
- Don't over mix.
- Fold in apple and nuts.
- Pour batter into prepared bunt pan and bake for an hour.
- Test with a cake tester or toothpick to ensure its done.
- ( skewer should come away clean ).
- Place on rack while you make the glaze.
- THE GLAZE.
- In a pot on top of the stove, melt the butter.
- Add the sugar and cinnamon,stirring often.
- When sugar has melted add cream, stir well until the mixture has thickened slightly
- Remove cake from pan onto some tin foil or plate.
- Gently stab some small holes into the cake so that glaze can seep in.
- Pour glaze over whilst cake is still warm.
- Serve warm with ice cream, or cold with cream
