Beef and Vegetable Stew With Roll

  1. Wash and peel onion.
  2. Cut into thin slices.
  3. Cut beef into 1/2-inch cubes.
  4. Spray a 10-inch non-stick skillet with non-stick cooking spray; heat over medium-high heat.
  5. Cook onion and beef in skillet for about 5 minutes, stirring occasionally until beef is browned.
  6. Stir in vegetables, tomato sauce, vegetable juice, and beef broth.
  7. Heat to boiling; reduce heat.
  8. Simmer uncovered for 5 minutes, stirring occasionally until vegetables are tender.
  9. Serve stew with a whole wheat roll and margarine.
