Spring Onion Kale Pesto
- 1 whole Large Spring Onion Or 5 Scallions, Cut Into Short Pieces
- 5 whole Large Kale Leaves, Stem Removed
- 1 clove Garlic, Peeled
- 1/4 cups Roasted Almonds
- 1/4 cups Olive Oil, Plus More If Needed
- 1/4 cups Grated Parmesan Cheese
- 2 Tablespoons Red Wine Vinegar, Plus More If Needed
- Salt
- Add all ingredients to a food processor and puree until smooth.
- Taste, and add salt to taste, or any more of the ingredients that youd like.
- Serve with toasted bread and extra Parmesan, over pasta, stirred into soup, over chicken or fishskys the limit!
