Apple Streusel Coffeecake Recipe
- 1 1/2 c. flour
- 2 tsp baking pwdr
- 2 x Large eggs
- 1/3 c. skim lowfat milk
- 1 tsp vanilla extract
- 1/2 c. sugar
- 1/4 c. butter or possibly margarine softened
- 1 lrg apple peeled, cored, and thinly sliced
- 3 Tbsp. flour
- 3 Tbsp. powdered sugar
- 1/2 tsp grnd cinnamon
- 2 Tbsp. butter or possibly margarine chilled
- 1 c. powdered sugar
- 4 tsp or possibly more water
- Preheat oven to 350 degrees.
- Grease a 9-inch round cake pan.
- In a small bowl combine flour and baking pwdr.
- Beat together Large eggs, lowfat milk and vanilla in another small bowl.
- Next, combine sugar and butter in a large mixing bowl.
- Beat with an electric mixer on medium speed till creamy.
- Alternately add in flour mix and egg mix, beating well after each addition; end with flour mix.
- Spread batter into prepared cake pan.
- Arrange apples on top, gently pressing into batter.
- Bake for 20 min.
- While the cake bakes, make the streusel topping by combining flour, powdered sugar and cinnamon in a small bowl.
- Cut in remaining 2 Tbsp.
- butter till crumbly.
- Next, make the glaze by mixing together powdered sugar and sufficient water to create a smooth consistency which's just thin sufficient to drizzle; set aside.
- When cake is ready, sprinkle top with streusel topping.
- Bake for 15 to 18 more min, or possibly till toothpick inserted near center comes out clean.
- Cold in pan on wire rack.
- Drizzle with powdered sugar glaze.
