Huevos Rancheros
- 12 oz. lean ground beef
- 2 bell peppers
- 1 14.5- to 15.2-oz soft taco dinner kit
- 6 large eggs
- 4 oz. Cheddar cheese
- Garnish: sliced scallions
- Heat oven to 400F.
- Lightly coat a baking sheet with nonstick spray.
- Cook beef in a large nonstick skillet over medium-high heat 2 minutes, breaking up chunks.
- Add peppers; saute 3 minutes or until crisp-tender.
- Stir in 3 Tbsp taco seasoning.
- Cook, stirring, 1 minute.
- Remove to a bowl; cover to keep warm.
- Meanwhile arrange 6 tortillas on baking sheet.
- Bake 8 to 10 minutes, turning once, until lightly golden.
- Bring 34 cup water to a simmer in skillet.
- Break eggs into a cup one at a time and slide into skillet.
- Cover and cook 3 to 4 minutes just until yolks are set.
- Place each tortilla on a plate.
- Spoon on beef and peppers.
- Top with an egg; sprinkle with cheese and spoon on taco sauce.
- Sprinkle with scallions.
- Save remaining tortillas and taco seasoning for another use.
