Huevos Rancheros

  1. Heat oven to 400F.
  2. Lightly coat a baking sheet with nonstick spray.
  3. Cook beef in a large nonstick skillet over medium-high heat 2 minutes, breaking up chunks.
  4. Add peppers; saute 3 minutes or until crisp-tender.
  5. Stir in 3 Tbsp taco seasoning.
  6. Cook, stirring, 1 minute.
  7. Remove to a bowl; cover to keep warm.
  8. Meanwhile arrange 6 tortillas on baking sheet.
  9. Bake 8 to 10 minutes, turning once, until lightly golden.
  10. Bring 34 cup water to a simmer in skillet.
  11. Break eggs into a cup one at a time and slide into skillet.
  12. Cover and cook 3 to 4 minutes just until yolks are set.
  13. Place each tortilla on a plate.
  14. Spoon on beef and peppers.
  15. Top with an egg; sprinkle with cheese and spoon on taco sauce.
  16. Sprinkle with scallions.
  17. Save remaining tortillas and taco seasoning for another use.
