Baked Vidalias and Rice
- 8 cups chopped vidalia onions
- 5 tablespoons butter
- 1 cup white rice, cooked according to package instructions
- 1 cup shredded monterey jack pepper cheese
- 34 cup heavy cream
- Preheat oven to 350F
- Grease a 9x9 baking dish.
- Saute the onions in a large skillet with 5 tbsp of the butter until golden.
- Combine the rice, onions, cheese and cream in a medium bowl and mix well.
- Spoon the mixture into the baking dish and bake for 1 hour, or until brown on top.
