Boston Cream Filling: Recipe

  1. Whisk together yolks and 1/4 c. sugar, then blend in flour.
  2. Combine lowfat milk and remaining sugar in a medium saucepan; place over medium heat, and heat just till mix comes to a boil.
  3. Pour half of the warm liquid over yolk mix, stirring to combine.
  4. Pour yolk mix back into saucepan; bring to a boil, stirring constantly.
  5. When thick and smooth, remove pan from heat and pour custard into a large bowl to cold.
  6. Cover surface with plastic wrap; chill.
  7. When ready to assemble, stir in flavorings, then mix in cream.
