Quick! Pork With Mushroom Gravy

  1. Slice pork tenderloin into slices 1/2 inch thick.
  2. Heat 1 Tbsp oil in a large non-stick skillet over medium-high heat.
  3. Add pork and cook 2-3 minutes per side until lightly browned and just barely pink in the center.
  4. Remove to plates; cover loosely with foil to keep warm.
  5. Reduce heat to medium, add mushrooms to pan and cook, stirring occasionally, 5 minutes or until lightly browned and soft.
  6. Stir in 1 1/4 cups water and gravy mix.
  7. Cook 3 minutes or until thickened, stirring occasionally.
  8. Spoon over pork.
  9. Garnish with parsley, if desired.
