Bobbie's Gazpacho Recipe
- 1 lrg can vegetable juice cocktail
- 1 x Clove garlic, chopped
- 2 x Carrots, finely minced
- 1 x Cucumber, finely chopd
- 1 x Onion, chopped
- 1 Tbsp. Wine vinegar
- 1 Tbsp. Extra virgin olive oil
- 2 x Radishes, diced
- 3 stalk celery, finely chopd
- 1/2 x Green pepper, diced
- 1 x Tomato, peeled & minced
- Fold in large deep bowl: juice, garlic, carrot, cucumber, onion, vinegar, extra virgin olive oil, radishes, celery and green pepper.
- Chill.
- Serve cool.
- Can add in minced, peeled tomato.
- Serving Ideas : Serve cool.
