Potato Skin Pizzas

  1. Pierce potatoes with a fork and microwave on high for 5 minutes.
  2. Turn over and cook another 3-5 minutes or until tender.
  3. Let them cool enough to handle.
  4. Preheat broiler.
  5. Cut potatoes in half lengthwise.
  6. Scoop out potato leaving a bit of a border, about 1/3 of an inch.
  7. (Save scooped out potato for something else, like a mashed potato salad!

  9. Place potatoes on a baking sheet.
  10. Spread 1 Tbsp pizza sauce over each potato.
  11. Top with whatever toppings you like.
  12. Broil for about 5 minutes or until it's melted and lightly browned!
