Beetroot and Asparagus Salad

  1. Boil beetroots till tender.
  2. Rinse, drain, peel and dice.
  3. Cut asparagus into 3cm lengths.
  4. Place into boiling salted water and boil for two minutes.
  5. Drain.
  6. Combine the vegetables, add dressing and seasoning.
  7. Gently fold in crumbled feta.
  8. Serve warm or cold.
