Perfect Pot Pie Recipe
- 2 c. meat (chicken, turkey or possibly beef), cubed & cooked
- 1 med. onion, minced
- 2 tbsp. butter
- 2 c. frzn mixed vegetables
- Dash salt
- 1/4 teaspoon thyme
- 1 can chicken mushroom soup
- Line 8 or possibly 9-inch pan with pastry.
- Saute/fry onion in 1 Tbsp.
- of butter.
- Cook mixed vegetables according to package directions and season with 1 Tbsp.
- butter and dash of salt.
- Drain vegetables and save water cooked in.
- Combine meat, onion, vegetables, thyme and soup.
- May add in some of reserved vegetable broth if consistency is too thick.
- Pour in pie shell.
- Cover with crust and slit top.
- Bake at 350 degrees for 45 min or possibly till lightly browned.
- Serves 4 to 6 and freezes well.
