Country Captain Chicken

  1. Heat oil in heavy large saucepan over medium-high heat.
  2. Add onion, apple and garlic and saute until tender, about 10 minutes.
  3. Mix in curry and stir 1 minute.
  4. Add tomatoes, chicken broth and currents.
  5. Reduce heat to low.
  6. Cover; simmer 30 minutes to mellow flavors.
  7. Add chicken and simmer until cooked through, about 10 minutes.
  8. Season to taste with salt and pepper.
  9. Ladle chicken over steamed rice.
  10. Garnish with cilantro and coconut and serve.
