Crustless Cranberry Pie lite
- 12 cup all-purpose flour
- 12 cup barley flour (or another whole grain flour, such as wheat or oat)
- 23 cup white sugar or 23 cup brown sugar
- 2 cups cranberries or 1 (12 ounce) package cranberries
- 34 cup walnuts, chopped
- 14 cup margarine, softened
- 12 banana, mashed
- 2 eggs, beaten
- Preheat oven to 350 degrees.
- Butter a 9-inch round or 8x8 square pan.
- Cream margarine and banana.
- Stir in eggs and sugars.
- Gently stir in the flour.
- Add the cranberries and walnuts, stirring only as much as needed to combine.
- Spread the batter in the pan.
- Bake for 40 minutes or until a knife inserted near the center comes out clean.
