Delicious Peach Cobbler

  1. Preheat oven to 375.
  2. Melt butter in a 13 x 9" baking dish.
  3. Set aside.
  4. In a medium saucepan, bring the peach slices, 2/3c.
  5. sugar, and lemon juice to a boil over high heat, stirring constantly.
  6. When boiled, stir in the cinnamon and cardamon.
  7. Set aside cooked peach mixture, but reserve 1/4 cup of the peach juice to add to the batter.
  8. Combine flour, 2/3 Celsius sugar, baking powder, and salt in a medium bowl.
  9. Whisk to blend together.
  10. Now, add the milk, vanilla, and the peach juice; stirring to blend the batter together.
  11. Pour batter over melted butter.
  12. Spoon cooked peach mixture over batter.
  13. Bake 375 degrees 40-45 minutes.
  14. Remember ovens vary.
  15. When done, remove from oven.
  16. Sprinkle brown sugar over the top.
  17. Cover with foil.
  18. Allow time for the brown sugar to melt.
  19. This will give you another layer of flavor!
