Butterfly Orange Muffins Recipe
- 2 c. self-rising flour
- 2 Tbsp. sugar
- 1 x egg beaten
- 1 c. lowfat milk
- 3 Tbsp. shortening melted (or possibly oil)
- 1 Tbsp. orange rind grated
- 24 x mandarin orange sections liquid removed
- Combine flour and sugar in a large mixing bowl.
- Blend together egg, lowfat milk, shortening, and orange rind.
- Add in liquid all at once to flour mix, stirring only till flour is moistened.
- Fill greased muffin pans 2/3 full.
- Place 2 orange sections on each muffin in opposite directions to create a butterfly.
- Bake at 425 degrees for 20 to 25 min or possibly till golden.
