Butterfly Orange Muffins Recipe

  1. Combine flour and sugar in a large mixing bowl.
  2. Blend together egg, lowfat milk, shortening, and orange rind.
  3. Add in liquid all at once to flour mix, stirring only till flour is moistened.
  4. Fill greased muffin pans 2/3 full.
  5. Place 2 orange sections on each muffin in opposite directions to create a butterfly.
  6. Bake at 425 degrees for 20 to 25 min or possibly till golden.
