Apple Cheddar Quesadillas

  1. Combine brown sugar and butter in 10-inch skillet.
  2. Cook over medium heat, stirring occasionally, 2-3 minutes or until bubbly.
  3. Add apple slices; continue cooking 5-8 minutes or until slices are tender.
  4. Stir in dried cranberries.
  5. Remove from heat.
  6. Heat 10-inch skillet or electric griddle over medium heat.
  7. Spray 1 side each tortilla with no-stick cooking spray.
  8. Layer each, sprayed-side down, with 1/4 apple mixture and 2 cheese halves.
  9. Fold tortillas in half over mixture.
  10. Place 2 quesadillas into skillet.
  11. Cook, turning once, 3-5 minutes or until golden brown.
  12. (If necessary, wipe out skillet with paper towels.)
  13. Repeat with remaining tortillas.
