Apple Cheddar Quesadillas
- 1/4 cup firmly packed brown sugar
- 1 tablespoon Land O Lakes Butter
- 1 large (2 cups) tart apple, sliced 1/8 inch
- 1/4 cup sweetened dried cranberries
- 4 (7-inch) low fat whole wheat tortillas, warmed
- 4 (3/4-ounce) slices Land O Lakes Deli Sharp Cheddar American Blend,
- cut in half diagonally
- Combine brown sugar and butter in 10-inch skillet.
- Cook over medium heat, stirring occasionally, 2-3 minutes or until bubbly.
- Add apple slices; continue cooking 5-8 minutes or until slices are tender.
- Stir in dried cranberries.
- Remove from heat.
- Heat 10-inch skillet or electric griddle over medium heat.
- Spray 1 side each tortilla with no-stick cooking spray.
- Layer each, sprayed-side down, with 1/4 apple mixture and 2 cheese halves.
- Fold tortillas in half over mixture.
- Place 2 quesadillas into skillet.
- Cook, turning once, 3-5 minutes or until golden brown.
- (If necessary, wipe out skillet with paper towels.)
- Repeat with remaining tortillas.
