Shrimp Delight
- 1 lb. shrimp
- 4 Tbsp. butter
- 4 Tbsp. flour
- 1 c. half and half
- 6 oz. Cheddar cheese, in chunks
- 1/3 c. catsup
- 1 tsp. Worcestershire
- 1/4 tsp. celery salt
- 1/8 tsp. white pepper
- 3 c. cooked rice
- 1 (4 oz.) can mushroom pieces
- breadcrumbs
- Place shrimp in cold water.
- Bring to a boil and remove from the heat.
- Let sit 3 minutes.
- Peel and clean shrimp and set aside.
- Preheat oven to 350u0b0.
- Melt butter in a heavy saucepan and blend in flour.
- Add half and half gradually to make a smooth sauce.
- Add cheese, catsup, Worcestershire and seasonings.
- Stir over medium heat until cheese has melted.
- Fold in cooked rice, mushrooms and shrimp.
- Spoon into a casserole dish; sprinkle with crumbs and bake 30 minutes.
- Serves 4.
