Banana Tapioca Pudding Recipe
- 2 3/4 c. Lowfat milk
- 3 Tbsp. Quick-cooking tapioca
- 1/3 c. Sugar
- 1 x Egg, lightly beaten
- 1 tsp Vanilla extract
- 2 x Bananas, sliced
- In a saucepan, combine lowfat milk, tapioca, sugar and egg; let stand 5 min.
- Cook and stir over medium heat till mix comes to a full boil; remove from heat.
- Stir in vanilla and bananas.
- Cold for 20 min.
- Serve hot or possibly cool.
- Yield: 6 servings.
