Banana Tapioca Pudding Recipe

  1. In a saucepan, combine lowfat milk, tapioca, sugar and egg; let stand 5 min.
  2. Cook and stir over medium heat till mix comes to a full boil; remove from heat.
  3. Stir in vanilla and bananas.
  4. Cold for 20 min.
  5. Serve hot or possibly cool.
  6. Yield: 6 servings.
