Indiana Egg Casserole
- 8 lg. hardboiled eggs, coarsely chopped
- 2 cups diced celery
- 1/2 cup coarsely chopped pecans
- walnuts
- 2 green onions, diced
- 1/2 green bell pepper, diced
- Salt, to taste
- Pepper, to taste
- 1 cup mayonnaise
- 1 cup grated sharp cheddar cheese
- Crushed potato chips, for garnish
- With two forks lightly toss together first 8 ingredients.
- Pour into a buttered two-quart casserole; sprinkle with cheese and top with crushed potato chips.
- Bake in preheated 350F oven for 30 minutes.
