Two-Way Beans

  1. Combine beans with water and 2 teaspoons of the dried herb and bay leaf.
  2. Bring to boil and boil 2 minutes.
  3. Remove from heat and allow to sit for 1 hour.
  4. Drain.
  5. Add 2 quarts fresh water to drained beans with remaining dried herbs, garlic, smoked meat, carrots and onion.
  6. Bring to a boil; reduce heat, cover and simmer 2 1/2 to 3 hours, until beans are soft but still hold their shape.
  7. Drain and discard the meat and bay leaf.
