Two-Way Beans
- 2 cups dried beans, in any combination
- 2 quarts water
- 4 teaspoons dried oregano, thyme or marjoram
- 1 bay leaf
- 4 cloves garlic
- 1 pound smoked turkey or chicken, skin removed, or smoked pork, fat removed, and meat cut in large chunks
- 4 carrots, peeled and halved
- 2 large onions, quartered
- Combine beans with water and 2 teaspoons of the dried herb and bay leaf.
- Bring to boil and boil 2 minutes.
- Remove from heat and allow to sit for 1 hour.
- Drain.
- Add 2 quarts fresh water to drained beans with remaining dried herbs, garlic, smoked meat, carrots and onion.
- Bring to a boil; reduce heat, cover and simmer 2 1/2 to 3 hours, until beans are soft but still hold their shape.
- Drain and discard the meat and bay leaf.
