Char's Granola
- 2 container old-fashioned rolled oats
- 8 oz. slivered almonds
- 8 oz. shelled pumpkin seeds
- 8 oz. sunflower seeds
- 2 tbsp. ground cinnamon
- 1/2 c. extra-virgin olive oil
- 1/2 c. maple syrup
- 1/2 c. honey
- 1 c. walnut pieces
- 1 c. currants
- Preheat oven to 325 degrees F. Line 2 to 3 large jellyroll pans with foil; lightly coat with cooking spray.
- In large bowl, toss oats, almonds, pumpkin seeds, sunflower seeds, and cinnamon.
- Add olive oil, maple syrup, and honey and toss until evenly coated.
- Divide among prepared pans and bake 45 minutes, or until golden, stirring once.
- Transfer to wire racks to cool.
- When mostly cooled, add walnuts and currants and toss to combine.
- Store in an airtight container at room temperature or in freeze.
- Serve with fresh fruit and yogurt, if desired.
