Smoked Apple & BBQ Pork Sandwich
- 1-1/2 gal. pork butt roasts, cooked, shredded
- 1-1/2 qt. BULL'S-EYE Original Barbecue Sauce
- 1-1/2 cups frozen apple juice concentrate, thawed
- 6 each large apples, cored, each cut crosswise into 4 slices
- 1/4 cup oil
- 1 Tbsp. cinnamon sugar
- 24 each sandwich rolls, split
- Combine pork, barbecue sauce and apple juice concentrate in saucepan.
- Cook over medium-low heat until heated through, stirring occasionally.
- Meanwhile, grill apples over medium-high heat 5 to 8 min.
- or until crisp-tender, turning and brushing occasionally with the oil.
- Remove apples from heat; sprinkle evenly with the cinnamon sugar.
- For each serving: Spoon 1 cup of the pork mixture into each roll; top with 1 of the apple slices.
