Mini Party Cheesecakes Recipe

  1. Blend cream cheese, sugar, Large eggs and almond extract on low speed till combined.
  2. Beat on medium speed till smooth (2 to 3 min).
  3. Arrange 2 inch foil cupcake liners in 1 1/2 inch muffin c. pans, pushing paper down lightly.
  4. Arrange vanilla wafer in each c., spoon cream cheese mix in c. to within 1/8 inch from top.
  5. Bake in a preheated 350 degree oven till set but not browned (20 to 25 min).
  6. Cold to room temperature (about 30 min).
  7. Chill, covered, up to 36 hrs.
  8. To serve: Arrange strawberry fans on each cheesecake.
  9. May be refrigerated, covered, up to 2 hrs.
  10. Amount: 24 cheesecakes.
  11. LIME VARIATION: Substitute 1 Tbsp.
  12. lime juice and 2 tsp.
  13. grated lime peel for almond extract.
  14. Garnish with sliced quartered kiwi.
