Chicken Parmesan Sandwich
- 2 boneless skinless chicken breast halves (approximately 4-5 ounces each)
- salt and pepper
- 12 teaspoon garlic powder
- 12 teaspoon oregano
- 12 cup all-purpose flour
- 1 egg, beaten
- 34 cup seasoned bread crumbs
- 3 tablespoons grated parmesan cheese
- 2 tablespoons olive oil
- 2 slices provolone cheese
- 2 Italian rolls, ciabiatta or 2 French rolls, split lengthwise
- 13 cup marinara sauce or 13 cup meatless spaghetti sauce, warmed
- Flatten chicken to 1/2-in.
- thickness; sprinkle both sides with garlic powder, oregano and season to taste with salt and pepper.
- Place flour and egg in separate shallow bowls.
- In another bowl, combine bread crumbs and Parmesan cheese.
- Dip chicken in flour, then egg; roll in crumb mixture.
- In a large skillet, heat oil.
- Cook chicken over medium heat for 4-5 minutes on each side or until juices run clear.
- Layer chicken and cheese on bun bottoms; spread with marinara sauce.
- Replace tops.
