Lenny's Lentil Soup
- 12 lb lentils
- 4 ounces bacon, chopped
- 2 celery ribs, sliced
- 1 large carrot, diced
- 12 large onion, diced
- 1 large potato, diced
- 1 12 teaspoons salt
- 4 cloves, ground
- 6 cups water
- 2 tablespoons olive oil
- Dice the onion and cook with the chopped bacon over medium low heat until the onion is soft and the bacon is lightly brown.
- spoon off excess bacon fat.
- Add the lentils, carrot, celery, salt, ground cloves, olive oil and water, bring to a simmer, cover and cook for 1 hour.
- Add the potato and simmer 25 minutes.
