Buffalo Cheeseburger Soup
- 1 tablespoon oil
- 1 lb ground buffalo meat or 1 lb ground beef
- 1 cup diced onion
- 1 cup diced celery
- 2 tablespoons sun-dried tomatoes packed in oil, diced
- 1 teaspoon dried basil
- 1 teaspoon salt
- 3 cups chicken broth
- 12 cup sour cream
- 8 ounces cubed American cheese
- Brown the meat, onion, celery and tomatoes in the oil over medium heat until meat is cooked through and veggies are pretty tender.
- Add seasonings and broth.
- Stir in sour cream and cheese, reduce heat to low and allow cheese to melt.
- Do not let the soup boil after the dairy has been added.
