Beef and Sausage Chili

  1. Any spicy sausage can be used, in place of the chorizo.
  2. Cook chorizo in a large heavy saucepan, stir often.
  3. After 10 minutes drain off the fat.
  4. Remove from sausage.
  5. In same pan, heat oil.
  6. Add beef, a few pieces at a time.
  7. Saute until well browned.
  8. Remove.
  9. Repeat until all meat is browned.
  10. To the sauce pan add the onions, pepper and cook briefly until softened.
  11. Stir in garlic.
  12. Return chorizo and beef to the pot.
  13. Add broth, tomatoes, chili powder, cumin, salt, crushed red pepper, jalapeno.
  14. Bring to a simmer.
  15. Cover.
  16. Either cook on top of stove or in a oven 1 1/2 hours.
  17. Add chili beans, if used.
  18. Cook another 30 minutes uncovered.
  19. Serve piping hot.
