Beef and Sausage Chili
- 1/2 pound chorizo sausage removed from casing
- 1 tablespoon vegetable oil
- 1 1/2 pounds beef chuck boneless, cut into inch cubes, pat dry
- 1 each green bell peppers medium size, chopped
- 1 cup onions chopped
- 1 clove garlic large size, minced
- 1 cup chicken broth or beef broth
- 1 cup tomatoes, canned chopped
- 1 1/2 tablespoons chili powder
- 1/2 teaspoon cumin ground
- 1/2 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon black pepper
- 1 tablespoon jalapeno pepper chopped, or chilies for hot chili lovers
- 1 each chili beans 1 can, optional
- Any spicy sausage can be used, in place of the chorizo.
- Cook chorizo in a large heavy saucepan, stir often.
- After 10 minutes drain off the fat.
- Remove from sausage.
- In same pan, heat oil.
- Add beef, a few pieces at a time.
- Saute until well browned.
- Remove.
- Repeat until all meat is browned.
- To the sauce pan add the onions, pepper and cook briefly until softened.
- Stir in garlic.
- Return chorizo and beef to the pot.
- Add broth, tomatoes, chili powder, cumin, salt, crushed red pepper, jalapeno.
- Bring to a simmer.
- Cover.
- Either cook on top of stove or in a oven 1 1/2 hours.
- Add chili beans, if used.
- Cook another 30 minutes uncovered.
- Serve piping hot.
