Blue Tidal Wave Sorbet

  1. Stir water and sugar in heavy saucepan over medium heat until sugar dissolves.
  2. Increase heat; bring to boil.
  3. Remove from heat.
  4. Add concentrate; stir until dissolved.
  5. Pour into bowl.
  6. Mix in vodka and blue curacao.
  7. Chill until cold, about 2 hours.
  8. Transfer sorbet mixture to ice cream maker; process according to manufacturer's instructions.
  9. Transfer sorbet to container; cover and freeze until firm, about 2 hours.
  10. (Can be made 2 days ahead)
  11. Freeze 4 stemmed coupes or scallop shells for 1 hour.
  12. Scoop sorbet into frozen coupes and serve immediately.
