Crab and Rice Chowder
- 1 onion, small chopped
- 12 lb mushroom, thinly sliced
- 2 tablespoons salad oil
- 2 cups broccoli, coarsely chopped
- 1 red pepper, small and chopped
- 12 teaspoon thyme leaves
- 2 cups chicken broth
- 2 cups milk
- 1 (17 ounce) can cream-style corn
- 13 lb crabmeat
- 3 cups rice, cooked
- salt and pepper
- Saute onion and mushrooms in oil till limp.
- Add broccoli, bell pepper and thyme.
- Simmer till broccoli is tender about 4 minutes.
- Add chicken broth, milk and corn and stir.
- Cook uncovered about 10 minutes or until hot.
- Stir in crabmeat and rice.
- Simmer uncovered until hot about 2 minutes.
- Salt and pepper to taste.
