Black Bean Veggie Burgers with Corn Salsa

  1. In a medium sized bowl, mix together all of the ingredients for the corn salsa and chill for about an hour before serving.
  2. For the burgers: Preheat your oven to 425 F. Spray two baking sheets lightly with nonstick spray and set aside.
  3. Add the carrot to a bowl with a little water, cover it and microwave for about two minutes.
  4. Then remove the cover and allow the carrots to cool.
  5. Drain excess water.
  6. Mash the black beans in a large bowl.
  7. Once cooled, mash the carrots and add them to the mashed black beans.
  8. Mix together then add the remaining vegetables and mix well.
  9. Add the oats, breadcrumbs, seasoning and salsa.
  10. Mix together until combined.
  11. Add the flour and mix well.
  12. If the mixture is too moist, add more flour and adjust the seasoning, as needed.
  13. Form the mixture into patties and place them on the baking sheets.
  14. Bake at 425 F for about 20 minutes, flipping them halfway through cooking.
  15. When the burgers are finished, serve them with the corn salsa or your favorite topping.
