Fresh Coconut Cake

  1. Bake cake and cool completely.
  2. Open coconut, remove outer hard shell, pare inner brown shell, rinse and grate.
  3. Mix sugar, sour cream and coconut.
  4. Fold in cool whip.
  5. Spread frosting between layers of cake and outsides of cake.
  6. Refrigerate overnight.
