Chicken 'N' Noodle Stew Recipe
- 1 (4 ounce.) stewing chicken
- Salt
- Freshly grnd black pepper
- Celery leaves
- 1 chicken heart, finely minced
- 1 chicken gizzard, finely minced
- 1 pound egg noodles
- 1/3 c. scallions, finely minced
- 1/3 c. cooked ham, shredded
- Wash chicken thoroughly.
- Cut into serving pcs.
- Place chicken in large kettle and cover with cool water.
- Heat to boiling, reduce heat and simmer till chicken is tender.
- Remove chicken from kettle and shred the meat.
- Add in celery leaves, chicken heart and gizzard to stock in that chicken was cooked.
- Simmer till tender.
- Cook noodles in boiling, salted water till hard, but tender.
- To serve, place noodles in deep, individual bowls.
- Pour stock over noodles.
- Add in chicken and scallions.
- Garnish with ham.
