Nina's Sweet N Tangy Looseleaf Salad
- 4 cup mixed looseleaf lettuce torrn into bite sized pieces
- 1 tangerine ( peeled, seeded, sectioned )
- 1/3 cup dried cranberries or craisins
- 1/4 cup raisins
- 1/4 cup shredded carrots
- 1/4 cup broken candied or sugared walnuts
- 1/3 cup golden balsamic vinegar
- 1/3 cup extra virgin olive oil
- 6 tbsp strawberry preserves jelly
- 1 shaved parmesan to taste
- for the salad:
- cut each section of tangerine in half.
- layer salad in order of the ingredients listed.
- for the dressing:
- add all ingredients into a jar and shake well!
- pour over salad.
- top with parmesan
- and serve!
- enjoy!
- makes enough forr 2 for a meal or 4-5 as a side.
