Hot-Water Cornbread

  1. Preheat griddle, or heavy seasoned cast iron skillet with oil.
  2. Mix dry ingredients together.
  3. Boil water (or microwave).
  4. When griddle sizzles., add the boiling water to dry ingredients.
  5. Stir once or twice and pour 1/4 cup on hot griddle.
  6. Turn once when edges are bubbly.
  7. Keep warm while finishing off cakes.
  8. Serve with butter and honey.
